28 Wilkie is a one-Michelin-starred contemporary Italian restaurant headed by Chef de cuisine, Seth Lai. Located on the ground floor of a 1930s conservation building, the elegant restaurant showcases Chef Seth’s accomplished take on seasonal produce, in particular premium ingredients from Japan.
Established in 2017, 28Wilkie is the first The House of Louis XIII outside of France, and one of two Dom Pérignon Society restaurants in Singapore. Also within 28Wilkie is a stylish caviar bar, created in partnership with Singapore-founded Caviar Colony.
Signatures include Hokkaido snow crab with ravanello, Russian hybrid caviar and a Granny Smith apple. Langoustine, with beetroot, seaweed butter Balsamico and tarragon, Bresse pigeon with parsnip, raddicchio tardivo and Dauphinoise potatores. Round it all off with panna cotta, kinkan, tarocco and hazelnuts.
Seth Lai, Chef de cuisine at 28Wilkie, cut his teeth at Iggy’s where he acquired his understanding of the techniques, thinking and tastes that underlie modern European cuisine. He especially enjoys working with the wide variety of premium Japanese ingredients available in Singapore.
Born in Perak, the 27 year-old Singaporean grew up with a little farm in his backyard. His grandmother, who he assisted with family meal preparation as a young boy, taught him to always make the best use of whatever was available to them. Seth continues to keep to this philosophy today.
He also draws on his earliest memories of his childhood to create contemporary dishes that he hopes will offer diners a fresh, elevated perspective of familiar flavours.
