Upper crust Singapore flocks to this elegant, modern and deliciously light dining room, accented by baby blue chairs, simple table settings and a covetable black granite countertop in the bar. The Italian cuisine here is outstanding, with modern twists meaning the likes of pan-seared yellow fin tuna with a citrus spicy dressing, Sicilian tapenade and pickled shallot or risotto with Hokkaido scallops, carrot coulis and ginger. Fine, fresh ingredients that change with the seasons and what’s been caught at the fish markets delivers the likes of Chilean sea bass, fresh as it comes and pan-seared simply.  If it’s not too muggy, make the most of the alfresco terrace and skyline views at lunchtime.
