SquareMeal Review of Labyrinth

The hawker centres may tout the Singapore staples of chicken rice and chilli crab but it's not until you’ve visited Labyrinth for chef Han Li Guang's new expression of Singapore cuisine that you can see the elevated levels to which Singapore’s cuisine can inspire. Commonly found local dishes are given a creative twist and chef Han ups the ante by incorporating locally grown ingredients in 80% of his menu. Expect locally reared quails and clams farmed off the coast of Singapore at this intimate spot within The Esplanade performing-arts centre that seats only 30 guests.

The lunch tasting menu is reasonable value at just over G$200 but expect a jump of just over 50% come dinner. There are many hits on the menu but a signature that they are particularly proud of is their Rainbow Yu Sheng inspired dish consisting of 7 julienned vegetables (each representing a different color and with mango, celtuce and beetroot all pickled, all served on otoro marinated in shoyu, sake and mirin, with an emulsion of Korean sesame oil, black bee honey, walnut and kaffir lime oil. The dish is finished with lacto fermented tomato snow to layer umami and acidity.? It’s easy to forgive the occasional underperforming dish when the taste and presentation of most dishes is consistently good.
