Tetsuya Wakuda is an inspirational chef marrying Japanese and European technique – together with some pretty impressive and high quality ingredients – to wonderful effect. There’s nothing bombastic, misplaced or left to chance, Wakuda’s flavours are exquisitely balanced and informed by the European culinary lexicon, while his presentation is meticulously precise. Try plum-fleshed marinated botan shrimp with sea urchin and Oscietra caviar for a sensational hit of sweet, savoury and umami. For main, shabu-shabu of citrus-sharpened king fish is a delight while Tasmanian abalone served with white asparagus is given textural dimension by fregola (like couscous) and wonderfully flavoursome tomato. Fresh-as-you-like braised Canadian lobster arrives infused with tarragon and a delightfully light lobster bisque, and charcoal-grilled fillet of Tasmanian beef is emboldened with wasabi. The restaurant itself is a pristine and immaculately designed, Japanese-inspired showcase: refined but warm, and located within the Marina Bay shopping complex. Through floor-to-ceiling windows, you can take in Spectra, the nightly water fountain show that happens in front of the Marina Bay Sands. Two daily dinner seatings: 5:30pm & 8:00pm.
