This intimate home from home is one of Singapore's hidden jewels. Originally Nouri's research and development unit, it is tucked away above sister restaurant Nouri and acts not only as a centre for culinary research but also as an art gallery and experimental dining experience. Open Tuesday to Saturday for dinner and drinks only - think small bites, sharing plates, great wines and spirits. There may be A5 Miyazaki wagyu tenderloin, pressed beef jus, white cabbage kimchi; walnuts with white sanctity mushroom, yamaimo mash, and vermouth chicken jus; or bhel piro served with Norwegian king crab. As expected it's all properly researched and beautifully executed. The chef worked previously at Heston Blumenthal’s Fat Duck and New York’s Per Se. Watch out for R&D dinners. Upstairs in the living room attic space is a drinking den dedicated to music including 3,000 vinyl records to enjoy. Visiting guest winemakers and artisan distillers add further excitement.
