The frisson from stepping into this lofty attic, 218m up, and looking out onto Singapore’s backgarden is well worth the mark-up on food and wine at this sparkling new destination. If you’re not left gawping through the window, you’re probably enjoying the modern decor flooded with natural light and dishes that marry Peruvian flavours with Japanese technique.
FLNT (“flint”) is a buzzy new addition and its sumiyaki bar and binchotan-fueled grill is the centre piece of an open kitchen where chefs go about their business with precision. Head boy Lamley Chua is constantly pushing the boundaries as he tries to blend contemporary flavours with traditional Japanese techniques to wow the modern palate.
Nikkei dishes include sashimi and tuna tataki from the raw bar, a range of attractive ‘Inka’ sushi and, from the grill, greatest hit dishes like Miso cod or rack of lamb with red pepper garlic sauce and kimizu dip. Wash it all down with cocktails and speciality sakés and when the nightclub’s open check into the Atico Ultra-Lounge to extend the fun.
NB Sister restaurant FIRE specialises in the contemporary grilling of meats over wood, Argentinian style. Expect prized cuts of meat, seafood, and vegetables, all beautifully sourced and done.
