Starters might be liver cremoso alla veneziana, sea urchin custard and royal oscietra caviar or organic egg yolk taglierini Santa Margherita prawn and sea grapes. Follow it up with pigeon breast, fichi arrosto, hay ricotta, trombetta della morte and chanterelle jus, and finish perhaps with Japanese egg zabaione, Marsala, mele renette, anice and castagne.
