Meta stands for metamorphosis and the restaurant’s experimental approach to French-inspired cuisine fizzes with excitement and Asian twists from the first dish to the last. Snacks take many different forms and are exquisite mini bombs of flavour, incorporating prawn roll, tuna, seafood pancake and foie gras. Korean abalone with multigrain, flower crab and kamtae (seaweed) rubs shoulders with kinmedai (sea bream) accompanied by foie gras, black truffle and shimeji mushrooms, while sublime pigeon is served with parsnip, chervil root and bacon. To finish, mandarin fruit with fruity sake kasu and kaffir lime provides the perfect encore. There's an $80 corkage charge if you opt to bring a bottle from your own cellar.
