Housed within the Flower Dome at Gardens by the Bay, reputedly the largest glass greenhouse in the world, Pollen’s recent makeover including wooden furnishings and abundant botanicals, is helmed by Michelin-starred chef Michael Wilson, who sticks religiously to the seasons and isn’t afraid of pushing the frontiers. Flavours and textures are exciting and unfold in a wide-ranging set of menus. Take for example smoked eel, gazpacho with spanner crab and whey granita or seared foie gras with Jerusalem artichoke and fig marmalade, followed by suckling pig or toothfish with sweet peas, squid and bergamot. Complimentary access to the Flower Dome and buggy service from the arrival plaza at Gardens by the Bay are all part of the fun.
