This new rooftop dining space gives quintessential Singapore views alongside what is billed as progressive Australian cooking. And they’re right to make a thing of it, as the flavours are pure, the textures precise, the sourcing of ingredients faultless and the resulting dishes first-rate. Modern techniques, plenty of innovation and a light touch reveal dishes like smoked eel with asparagus or pickled and braised Argentinian Angus beef tongue with a herb vinaigrette. For main there’s Tasmanian ocean trout with aromatic Kampot peppercorns, zucchini and pickled red cabbage, or try the chicken with barley, caramelised yoghurt, kale and parsnip. You won’t be disappointed.
