Fresh sushi served on a wooden ladder anyone? It’s not the most ridiculous idea, particularly if your Instagram feed needs a service, and the price taste ratio hits the mark. This 2021 new launch is an informal Japanese restaurant, sushi and saké bar all rolled into one. Its mission statement highlights the values of a Japanese warrior as its inspiration – precision, consistency, creativity and continuous improvement. Add in its understated setting and you what you see is what you get. A range of sets, designed for quick decisions, offers nigiri, salmon, kaidan basic, aburi mentai or foie gras. There’s even a cheese set which may point you in the direction of a goodly range of saké and sparkling saké. Highlights off the menu include A5 Miyazaki Wagyu served with Inaniwa udon and scallops served with pasta and a Mentaiko sauce. The latter pairs well with a sparkling yuzu.
