With its enviable setting atop the OUE Bayfront on Collyer Quay, VUE is a stand-out destination not only for its binchotan-grilled signature dishes but its wine and cocktails sass, too. It boasts one of Singapore’s best skyline views and the city’s first rooftop spritz bar, where classic cocktailsc can be paired with charcuterie and cheese boards. Wagyu is a speciality, whether it is A5 Kimamoto Wagyu beef tartare or Wagyu brisket. There’s also exceptional beef short ribs or beautifully presented braised pork belly. Don’t miss, however, the signature binchotan-smoked Kokuou Wagyu beef, slow-cooked for over 20 hours. It’s in limited supply but is sure to melt your heart. Finish, perhaps with chocolate gavotte crepes, hazelnut praline espuma and velvety cocoa nib ice cream or summer stone fruit, sumac mille feuille and honey oat ice cream.
