Just occasionally a new chef comes along, bent on pushing not just the envelope but the complete rule book, and intent on exploring new culinary horizons. Chef Jason Tan (ex-Corner House) is one such chef, determined to take his Gastro-Botanica 2.0 cuisine to new levels. Here at Euphoria, Tan has unveiled an elevated iteration of his original cuisine that "showcases carefully sourced and prepared premium vegetables, meats and seafood, where prominence and elaboration are given to botanical elements of vegetables, tubers, herbs, spices, and fruits". Version 1 was a smash hit that caught the eye of both critics and influencers and this notoriety meant Tan found himself playing host to the likes of Singapore’s Prime Minister Lee Hsien Loong, China’s President Xi Jinping and the Sultans of Brunei and Johor.
Version 2.0 showcases botanical essences to create base sauces known as Gastro-Botanica Essences – La Symphonie de Légumes. His signature dish of the Cévennes onion in four ways, simply named ‘My Favourite Vegetable’, captures all the key elements. Go with an open mind and trust your instincts as the results are fantastic – like tapping into a new sense.
Located in Tras Street, no element is left to chance and the restaurant's design is as stage-managed as the food, "recreating a lush garden within its heritage shophouse interior". This is Tan's time. Prepare to be wowed!
