Japanese culinary tradition is taken to the nth degree here at swanky Shinji by Kanesaka, an extension of 1 Michelin star Chef Shinji Kanesaka’s Edo-style sushi restaurant first set up in Tokyo’s exclusive Ginza district. This means old school attention to detail that is fully authentic and uncompromising, best experienced in an omakase menu where the chef makes and skilfully executes the selection for you. Tuna usually plays a key role on these fish platters which demonstrate an astonishing variety of textures and flavours, but don’t miss featherlight kombu-cured mullet if it’s on the menu.

The setting pays homage to Japanese culture and art – think elegant koushido lattice panels and shouji window panes.
