Unmistakably high end sushi omakese restaurant which is cossetting and elegant in equal measure. On arrival you are greeted by an arresting, made-to-measure kinetic flower centrepiece that pulsates with blooming movements behind the minimalist, 13-seater sushi counter, while another design feature is a textural 'ice brick' wall. Alongside the bar, a full-length chiller provides a stylish showcase of top-flight wine and saké, while around the corner two private rooms – Ryu and Hana – seat up to 10 and six respectively and provide equal comfort.
Signatures include hairy crab served in whole yuzu where the crab is counterpointed with sea urchin, caviar, a soy sauce jelly dressing and wasabi. Awabi abalone, steamed and deliciously paired with a sauce made with its liver is another must-try, but the stand-out is perhaps the Aburi Ootoro where the tuna belly is topped with the fatty negitoro and served with Aburi foie gras on a slice of scallop with sea urchin, caviar and gold leaf. All of this richness and umami deserves a great list of Sakés, which is the drink of choice here.
Sushi and sashimi are both superb, too, and a sushi focused menu is ideal for smaller appetites.
